What makes All-Clad so great?  Part of it is the hand-crafted quality which goes into each piece.  Part of it is the superb design.  And part of it is the high-quality materials used.

Cookware can be constructed from various materials.  Copper is popular among high-end users because it conducts heat better than most anything else.  It heats up quickly and cools off just as quick.  But copper is very high maintenance, needing constant polishing and regular retinning. 

Aluminum also conducts heat well.   However, it is not particularly durable, and aluminum can react with food to discolor it.

Stainless steel is perhaps the most durable material around, and it is 100% non-reactive with food.  However, stainless steel does not have particularly good heat conductive properties.

All-Clad makes use of the the best characteristics of  all materials to make its cookware.  All cookware has the durable, non-reactive 18/10 stainless steel (also known as "surgical stainless steel") interiors.  All have an aluminum core which also extends up the sides for perfect heat distribution (most premium cookwares which have aluminum cores only have the core on the bottom of the pan).
